Just like it's fun to play with stereotypes or add in a bit (or more) of prejudice to a game, breaking the stereotypes to craft believable characters is a blast. I don't think I've ever, as a player, had any of my characters be implicitly prejudiced.
My favorite SR character, my elf street sammy chica with roller-blades, has a somewhat unusual background I worked up so to have her fit in with one of the other players at the table at the time. Whereas I intended to play the quick, agile and deadly sammy girl, he wanted to play the go-to guy with skillwires, smarts and street savvy. Made him a troll.
Cheesy as it may be when thinking back to it, the background I made for my character involves the Night of Rage of 39 -- when she was two years old -- and the other player's character when he was 12. Anyway, long story short: her parents get trapped under some fallen debris, hand over the toddler to the troll boy who came racing over to try to help. They make it out, troll boy and toddler elf. Grew up on the streets, taught her those all-important survival skills and whatnot. Big settlement with mucho nuyen eventually, got all spent on augmentations for fun and profit.
So, the elf sammy? Speaks very much like a troll (had a charisma of 2 when she first got penned down), since she's essentially been raised by one. Also, tends to find trolls in general to be fun, huggable, and quite a handsome lot.
A very fun character to play.
