Guys, I'm not in front of my books but I do have a question ... who is currently the head of Knight-Errant?

Also, have any splat books really delved into their structure/composure the way LoneStar had in previous editions?

According to Market Panic (p.53, 56), Clayton Wilson is still in charge of Knight Errant as of 2077. He founded Lone Star in 2020, but was forced out in 2036. Damien Knight hired him to take over Knight Errant in 2071, after Roger Soaring-Owl resigned. See also: Corporate Guide (p.50, 57, 198).
