The skills set... well thats inexperience as a player. my thinking was I wanted him to be good with all the close combat methods As he's primarily using his Axe & fists, so throwing in the clubs was just to get the group. I can look at the math for changing the lvls See where it can go. Usda is like me. New to the art of Running as is our whole group.
No problem ^^ as someone else said, "everybody has to start somewhere", and my firts characters had some disturbing common points with yours. If this characters isn't underpowered in the group you play in, and it fits with the way your GM plays, keep him like this. You'll learn by playing.

I think I'm goingto free up some points and break up the Athletics group. Well maybe just lower the level. It's just the idea of this hulking mountain having gymnastic skills seem funny. Not to mention the sight of him in a singlet :o

Even though we may not get to use it often the idea of having an AC with AP rounds when the enemy has an armored vehicle makes me feel warm and fuzzy! I did/do worry about the logistics of traveling/working with that bamhammer weapon though.

Would I have to break up the group to specialize with the axe? He's a minotaur he just HAS to have an axe! ;D

You could just break the groupe and specialize into blades and unarmed, it's still cheaper than taking clubs too. A group is better than separte skills if you want to use 3 skills at last. If you just need two, don't take the group.
I think not taking unarmed combat is just too bad because with such a character it already allows you to do great damage (maybe even more than with an axe, if you take the good options), and you never have to worry about carrying your fists. But if you really want an axe, even if it's useless, I can understand, I make too silly choices even on my recent characters just because "it has to be".
But if the axe is the only blade which you wanna use, then specialise… you can take blades 2 and specialise into axe, it'll make blades 2 axe 4, so you're at the same level than now, but it's cheaper in BP. For example : blades (axe) 2 and unarmed combat (boxing) 2 will allow you exactly the same dice pools than your melee group : 4 with the weapons you've got, but it costs 20 points instead of 40.

Oh I'm thinking of definietly going to do something with his unarmed skills. I may go Ajack's way and Spec  him up in anarmed but keep him with blades. or split the spec and have him speced once in both unarmed & Axe. Equally dangerous with either. Then as I see how things go I'll move towards a second spec in Unarmed if thats how I fight most.

So if i read this right I can take up to 4 manuvers since I have taken a 10 point Boxing quality at a cost of 8 BV for the manuvers total.

Finishing move
Hearding
Set up
Riposte

No the +2DV are martial art advantages, maneuver are something different, you purchase maneuver at the cost of 2BP per maneuver, with a limit which is if I remember well 2 maneuvers max per level of the martial art advantage.

No, you make a multi strike when you attack more than one opponent in one attack, then you split your pool between the opponents. The "multistrike" maneuver gives boni/bonuses to the multistrike option. There's two way I know to make more than one attack on one opponent in one IP with melee weapons, the first is an option when you're wielding two weapons (described in arsenal, a little bit after the maneuvers description), the other is the maneuver "finishing move", which as an interrupt action can allow you to spend immediatley your next action to make a second attack in the same IP.

I would recommend something that would use his size and strength. Something that doesn't use alot of kicks also. Wrestling and Boxing are the first things that popped into my head. Both are very American and would make sense with his background.

Go with herding over riposte, I think. Riposte isn't that useful to you. It just means sometimes you get to attack faster and lose your action.

Riposte gives an attack after a successful block at the price of a forthcoming action. both sounded useful, Riposte gives me the ability to sock another enemy and herd gives me the ability to set up Our snipers kill.

Would I be you, I would let the "ourdoor" group go, and take perception instead. 10 points for the outdoor groupe, that makes perception 2 (spec. visual perception).
