Title: What's a drone build for someone who wants to be almost constantly jumped in?

Let's say that there's a highly reclusive/paranoid runner who wants to use a drone (probably anthroform) as their "body" during all social interactions,and also on runs. They'll rarely,if ever,disconnect from it except when their real body absolutely needs to.

What choices might they make in building a drone that can reasonably be used for socializing,but also can pull it's weight when it comes to sneaking as well as either melee or gun combat (but not necessarily both)?

Get an iDoll. Up the specs to how you like. Let it wear armor and use weapons like any normal person. Done. ;)

Sekretar if you want to look like a human and has generally the best stats,  Kikai if you don't mind to look like an ork and want to be as strong as one, Sparring Drone if you are on a budget.

iDoll has to little body and low stats for my taste to be an effective runner vehicle.

If money is no issue Direktionssekretar 40k with realistic features 4 80k could go little buddy 2k with realistic features 4 5k or sparring drone 5k (take no damage from Melee attacks) or transys Maid 8k

Sparring Drone is in Hard Targets p.190, the Transys Office Maid is in Stolen Souls p.180 and 197 although it's not exactly clear if that drone is anthropomorph or has just two arms

Realistic Features 4 idoll, and some Ares Duelists for muscle.  Starting point for you anyway.
